Mushroom and rice soup. Ingredients: 2 tsp butter 10 oz white mushrooms 6 oz shiitaki mushrooms 3 garlic cloves 1 large onion 2 carrots 2 celery stalks 1 handful parsley 1 tsp paprika 1/2 tsp red pepper flakes 2 tsp soy sauce 4 cup mushroom broth 1/2 cup cooked rice (white or wild or mixed) Chop onions, garlic and mushrooms finely. Saute onions in butter in soup pot for 5 minutes, then add mushrooms and garlic and saute for five more minutes. Chop carrot and celery. Add everything but rice to pot. Simmer until carrots are soft (about 20-25 minutes). Add rice.
